The grapes come from selected vineyard plots and vine rows above St. Pauls. The clay-rich soils (from the German 'Lehm'), combined with a gravel component ('Stein'), inspired the name of this Riserva, which expresses the most elegant character of Pinot Noir in San Paolo.

The Lehmstein is an elegant Pinot Noir Riserva with a luminous, rubin red colour. The nose is characterized by flavors of dark cherries and red currant with undertones of forest floor, clove and violet. On the palate, it is well balanced, with a silky texture, fine tannins, and a long finish.
- Vineyard
The vineyards are located on southeast-facing slopes at 400–500 m above sea level and are characterized by clay moraine deposits with a loamy-sandy structure.
- Age of the vines 21-26 years
- Vinification
Cold maceration for several days, followed by a controlled, slow fermentation in stainless steel, aging for 15 months in barriques and tonneaux, followed by at least 10 months of additional bottle ageing.

Pairs wonderfully with mushroom risotto, game meats, and other earthy dishes such as beetroot gnocchi.
